Kumro Saag er Chochhori
Ingredients:
- Kumro saag/ Pumpkin leaves -
- Kumro/Pumpkin cubes - 1 cup
- Potato cubes - 1cup
- Green Chili - 4-6
- Red dried chili - 1
- Paanch foron - 1tsp
- Cumin powder - 1tsp
- Turmeric powder - 1tsp
- Salt - as per taste
- Suger - 1/2 tsp
- Mustard Oil - 2 tbsp
Steps:
- Wash all the vegetables, peel potato and pumpkin and cut into cubes.
- Wash the pumpkin leaves and strain well (avoid the spring like attachment on the stems).Cut the hard stems into finger size length and chopped the leaves.
- In a deep pan/kadahi add mustard oil.When the oil is hot add paanch foron + red dried chili. After few minutes add pumpkin cubes + potato cubes + green chilies and fry for 5-10 minutes.
- After 5-10 minutes add chopped kumro saag/pumpkin leaves. Add turmeric powder + cumin powder and stir .
- Now cook it for 10-15 minutes with lid in medium low heat.
- Then add salt + sugar mix it well and switch off the flame.
- Serve it with hot steamed rice.
