Kumro Saag er Chochhori

Ingredients:

  1. Kumro saag/ Pumpkin leaves -
  2. Kumro/Pumpkin cubes - 1 cup
  3. Potato cubes - 1cup
  4. Green Chili - 4-6
  5. Red dried chili - 1
  6. Paanch foron - 1tsp
  7. Cumin powder - 1tsp
  8. Turmeric powder - 1tsp
  9. Salt - as per taste 
  10. Suger - 1/2 tsp
  11. Mustard Oil - 2 tbsp

Steps:


  1. Wash all the vegetables, peel potato and pumpkin and cut into cubes.
  2. Wash the pumpkin leaves and strain well (avoid the spring like attachment on the stems).Cut the hard stems into finger size length and chopped the leaves.
  3. In a deep pan/kadahi add mustard oil.When the oil is hot add paanch foron + red dried chili. After few minutes add pumpkin cubes + potato cubes + green chilies and fry for 5-10 minutes.
  4. After 5-10 minutes add chopped kumro saag/pumpkin leaves. Add turmeric powder + cumin powder and stir .
  5. Now cook it for 10-15 minutes with lid in medium low heat.
  6. Then add salt + sugar mix it well and switch off the flame.
  7. Serve it with hot steamed rice.
