Hyderabadi  Veg dum Biriyani


Ingredients:

  1. Long grain basmati rice - 1 kg
  2. Cauliflower - 1 small
  3. Carrot - 2 big
  4. Potato - 2 medium
  5. Beens - 50 gm
  6. Thin sliced onion - 1 big
  7. Ginger garlic paste - 1tbsp
  8. Coriander leaves - 1/2 cup
  9. Mint/Pudina leaves - 1/2 cup
  10. Curry leaves - 10-12
  11. Curd - 1 cup
  12. Veg biriyani masala - 2 tbsp
  13. Whole garam masala - 
  14. Garam masala powder - 1 tsp
  15. Red chili powder - 2tsp
  16. Saffron - pinch of soaked in water
  17. Bay leaf - 1 medium
  18. Rose water - 1 tsp
  19. Salt - as per taste
  20. White oil - 300 ml
  21. Ghee - 50 gm


Steps: 


  1. Wash the basmati rice properly. And soak in water for 30 minutes. 
  2. In a big pan add enough water + salt + oil + whole garam masala and boil it. After 30 minutes add the rice and cook it 80%. Now strain the rice and keep aside.
  3. Cut the vegetables in big chunks(otherwise it will be mashed). Boil it for 5-7 minutes and drain the extra water.
  4. Now fry all vegetables for 5 minutes and keep aside.
  5. In a big pan/kadahi add oil. after heat the oil add thin sliced onion and fry till brown in color.Put it in a bowl and keep aside.
  6. Add some more oil in the same pan/kadahi.After heat the oil put the whole garam masala + bay leaf + curry leaves. Add ginger garlic paste + all fried vegetables and cook for sometimes. Now add chopped coriander + chopped mint leaves + veg biriyani masala + garam masala powder + red chili powder + salt  and mix it well . stir it for few minutes and then add the curd and cook it for another 5 minutes.
  7. Now in a another pan put oil + ghee and then put the 80% cooked rice (half quantity). over the rice put the vegetables curry and top on it add the rest amount of rice. on top sprinkle some biriyani masala powder + garam masala powder + rose water + fried onion + saffron water. cover the lid and cook it for 30 minutes in lower medium heat.
  8. After 30 minutes it will be ready to serve. Serve it with any kind of rich gravy/curry.
