Baked Fish n Vegetables
Ingredients:
- Fish fillet(Tilapia/Cod/Haddock) - 2
- Honey - 1tsp
- Oregano - 1tsp
- Basil - 1/2 tsp
- Lime juice - 1 tbsp
- Ginger garlic paste - 1tsp
- Parsley - 1tsp
- Greek Yogurt - 1tbsp
- Red Paprika powder - 1tsp
- Vinegar - 1tsp
- Cumin powder - 1/2 tsp
- Black pepper powder - 1 tbsp
- Salt - as per taste
- Carrot slices - 2 big
- Green beans - 15 pieces
- Extra virgin olive oil - 2 tbsp
Steps:
- Wash the fish fillets(I used Haddock fillet) and keep aside.
- In a big bowl add honey + oregano + basil + parsley + greek yogurt + red paprika powder+ vinegar + cumin powder + black pepper powder + salt + ginger garlic paste + lime juice and mix it well.
- Now add the fish fillet into the mixture,mix it well and rest it in refrigerate for at list 3 hours.
- After 3 hours preheat your oven in 400° F.
- Take a baking tray. Cut the vegetables and make a bed on the tray . Add black pepper powder + salt + vinegar + extra virgin olive oil over the vegetables. Now place the fish fillet over the vegetables and bake it for 30-35 minutes in 400° F.
- It’s ready.Serve it hot.
- You can use many more vegetables like potato,broccoli,zucchini,tomato,jalapeno etc.
