Baked Fish n Vegetables 


Ingredients:

  1. Fish fillet(Tilapia/Cod/Haddock) - 2
  2. Honey - 1tsp
  3. Oregano - 1tsp
  4. Basil - 1/2 tsp
  5. Lime juice - 1 tbsp
  6. Ginger garlic paste - 1tsp
  7. Parsley - 1tsp
  8. Greek Yogurt - 1tbsp
  9. Red Paprika powder - 1tsp
  10. Vinegar - 1tsp
  11. Cumin powder - 1/2 tsp
  12. Black pepper powder - 1 tbsp
  13. Salt - as per taste
  14. Carrot slices - 2 big
  15. Green beans - 15 pieces
  16. Extra virgin olive oil - 2 tbsp


Steps:

  1. Wash the fish fillets(I used Haddock fillet) and keep aside.
  2. In a big bowl add honey + oregano + basil + parsley + greek yogurt + red paprika powder+ vinegar + cumin powder + black pepper powder + salt + ginger garlic paste + lime juice and mix it well.
  3. Now add the fish fillet into the mixture,mix it well and rest it in refrigerate for at list 3 hours.
  4. After 3 hours preheat your oven in 400° F. 
  5. Take  a baking tray. Cut the vegetables and make a bed on the tray . Add black pepper powder + salt + vinegar + extra virgin olive oil over the vegetables. Now place the fish fillet over the vegetables and bake it for 30-35 minutes in 400° F.
  6. It’s ready.Serve it hot. 

  • You can use many more vegetables like potato,broccoli,zucchini,tomato,jalapeno etc.
