Kolkata Mutton Biriyani
Ingredients:
1. Long Grain Basmati Rice 500 gm
2. Mutton 500 gm(big pieces)
3. Boiled and fried Potato - 1medium cut into two pieces
4. Kesar - pinch of
5. Milk - half a cup
6. Mutton Biriyani Masala 1 tbsp (Whatever you like)
7. Cinnamon stick 2 small
8. Cardamom 4
9. Black Cardamom 1
10. Clove 3
11. Mace 1small
12. Red Chilli powder 1/2 tbsp
13. Chopped Onion 1 medium
14. Ginger Garlic paste 1/2 tbsp
15. Curd 2 tbsp
16. Salt as per taste
17. Oil + Ghee 100 gm
18. Kewra Water 1 tbsp
19. Whole Garam Masala
20. Hard boiled eggs - 2
Steps:
1. Wash the rice and soak it in water for about 2-3 hours.
2. Mix pinch of kesar in half cup of milk and rest it for 2-3 hours.
3. Roast all the thing cinnamon stick+cardamom+black cardamom+ clove+mace until nice aroma is coming. Then make it a fine powder with it.
4. Clean the mutton and marinate with salt+curd+ginger garlic paste+oil(1 tbsp) and rest it for 1 hour at least.
5. Heat a pan and put oil and 1 tbsp ghee.After heating oil add chopped onion make it little brown then add marinated mutton in it and stir.Put biriyani masala in it and mix it well.Add water and salt in it.Let it cook for 15-20 minutes.Boil 2 cup of water in a pressure cooker.After 20 minutes add the whole mutton with gravy in the pressure cooker and wait for 4-5 whistle.
6. For making rice In a pan heat some water. Add salt +whole garam masala and oil to it.As soon as it comes to a boil add the rice. Cook it partially and keep aside after straining from hot water.
7. Now in a heavy bottom pan at first add the mutton gravy (oil portion) then sprinkle some rice then add mutton pieces and some gravy also.Now add rest of the rice.Add fried potato + hard boiled eggs on the top and sprinkle that roasted masala put the kesar milk and 1tbsp of ghee(you can add more if you want),add kewra water.Let it cook on low heat covered with lid for about 30 minutes(till the rice fully cooked).
8. serve it with chicken/mutton chaap or any spicy chicken/mutton curry and raita.
