Fruit Cake:
Ingredients:
- All purpose flour - 100 gm
- Unsalted butter - 100 gm
- Plain Sugar/Brown Sugar - 150 gm
- Dry Fruits(cashew,cherries,black raisin,dates,walnut,pecan,tutti frutti) - 100 gm
- Egg - 4
- Baking Soda/baking powder - 1/2 tsp
- Cinnamon powder- A pinch of/Orange Flavor-1 tea spoon
- Rum/Brandi - 1/2 cup
Steps:
- Soak dry fruits in rum/brandy for 1 months or at list 12 hrs.
- In a big bowl add butter(it should be in room temp) +sugar and mix it very well,now add eggs ant mix nicely(if you have hand blender you can use that).
- In a another bowl whisk all purpose flour+baking soda/baking powder very well.
- Now slowly add the flour mixture in the first bowl(where you mix butter+sugar+eggs) and mix it very well till there are no lumps or granules.Add cinnamon powder/orange flavor and finally add the soaked dry fruits and mix it.
- Preheat your oven in 325° F.
- In a cake baking pan/oven safe pan apply some butter/white oil spray and sprinkle little bit of all purpose flour now pour your cake batter slowly and rest it for 40-45 minutes.
- When done turn off the oven,leave the cake for at list 20 minutes in that warm oven for perfect shape.
Notes:
*Dont use too much baking soda then it will result in a soapy and bitter taste.
*You can check your cake with a toothpick.Just stick a toothpick into the center of your cake. If there is wet batter still on the toothpick, it needs more time in the oven. If it comes out clean, your cake is done.*Dont use too much baking soda then it will result in a soapy and bitter taste.
*You need equal amounts of white flour,sugar,eggs and dry fruits.
